Dark hot chocolate with orange and cardamom, made in Ghana. Bright, fragrant and bold: for anyone who finds ordinary hot chocolate too sweet.

Yaa is named for Yaa Asantewaa, the Queen Mother who led the Asante resistance in 1900. Her cup is just as confident: citrus lifts single-origin Ghanaian dark chocolate, and cardamom warms it from the inside.

Tasting notes: dark chocolate, orange zest, cardamom.

How to make it

Whisk 30 g (about 3 tablespoons) into a splash of hot milk to make a smooth paste. Add the rest of an 8 oz cup and heat gently, whisking, until it just simmers.

Try it after dinner in place of dessert, or with a splash of rum on a cold night.
